Our process is unique!

Our teas are meant to be brewed as a strong herbal infusion—a concentrate that you will dilute to taste, when you want a cup of tea.

This method is easy and it ensures much greater nutritive benefit from the herbs than a typical herbal tea. Taken regularly, a strong herbal tonic can help promote balance and resilience.

So, if you want great taste AND the nutritive benefit of herbs, a longer infusion is ideal.

The Basic Idea is to infuse herbs in hot water for a long period of time (overnight works well), then strain. Your infusion is strong and herbally rich!

Our herbal infusions are perfectly suited as both a hot tea or as a cold refreshment.

Store in the fridge and simply dilute with hot or cold (sparkling) water any time.

Spring and Summer tonics are comprised of delicate leaves and flowers. They should be steeped in hot water but not boiled. (This is called an herbal infusion)

Fall and Winter tonics contain roots, dried mushrooms, bark and berries. Bringing these herbs to a short boil and then simmering will release more nutrients than just steeping. (This is called an herbal decoction)

Making Spring and Summer Tonics

  • Step 1

    MEASURE

    Measure (approx 4 T dry herbal tea mix) .

    Place in glass jar, french press or favorite tea pot.

  • Step 2

    STEEP

    Add 1 qt (4cups) hot water and place lid on container.

    Steep for up to 8hrs for a strong nutritive tonic (overnight is great!)

  • Step 3

    STRAIN

    Strain out herbs and pour tea into a clean container with lid.

    Use immediately or refrigerate for up to 2 days.

  • Step 4

    DILUTE

    For a Hot Tea:

    In your favorite mug pour 1/3 herbal concentrate and add 2/3 hot water.

    For a Cold Refreshment/ “mock-tail”:

    In a tall glass add 1/3 herbal tonic and 2/3 cold or sparkling water.

    *You may adjust the ratio of concentrate to water to your preferred taste

  • Step 5

    SWEETEN

    Add your choice of sweetener

    Honey is lovely. Or, try Simplicity Herbal’s Stevia Sweetener. Sprinkle a tiny amount (stevia goes a long way!) into your infusion toward the end of the herbal steeping process. Strain all herbs. Adding stevia will give just the perfect touch of sweet.

    Or you can use a small tea strainer to immerse a tiny amount of stevia into your mug of tea for a short period of time.

Making Fall and Winter Tonics

  • Step 1

    SIMMER

    Add 4 TBS herbal tea blend to 4 cups (1qt) water to a stainless saucepan on the stovetop.

    Cover and Simmer for approximately 20 minutes.

  • Step 2

    STEEP

    Turn off heat and Steep (covered) for up to 8hrs for a strong, nutritive blend.

    (overnight is great)

  • Step 3

    STRAIN

    Strain Herbs and pour concentrate into a clean glass jar or other glass container with lid.

    Use immediately or store in fridge for up to 2 days.

  • Step 4

    DILUTE

    For a hot tea: In your favorite mug, Pour approx 1/3 portion herbal concentrate and 2/3 hot water.

    For a cold refreshment/”mock-tail”: In a tall glass, pour 1/3 portion herbal concentrate and 2/3 cold or sparkling water.

  • Step 5
